My favorite summer dinner dish has to be marinated grilled chicken and tomatoes and cottage cheese. We probably have tomatoes + cottage cheese twice a week during the summer as a side dish.

Toasted onion buns with grilled spicy black bean veggie burgers, supremely spicy hommus,chopped scallions, avacado, tomato and lettuce. Grilled corn on the cob for a side served with TAZO passion iced-tea MMMmmmm!

Fav grill food: eggplant! Can't wait 'til Farmer Bos has his best variety at the farm stand. Brush with olive oil, add garlic salt and a few herbs. Heaven!

Favorite dish has to be Southwestern Chicken Salad - black beans, grilled chicken, cheddar cheese, tomatoes, green onions, lettuce mixed with light ranch dressing and topped with crushed tortilla chips. My favorite meal on a hot summer day!!

My favorite summer dish has to be caprese salad. Slice some fresh roma tomatoes and layer them between thick slices of fresh mozzarella cheese. Drizzle some extra virgin olive oil and toss some fresh sliced basil on top with a sprinkle of sea salt... serve with grilled pieces of crusty bread...YUMMY, YUMMY!

My favorite summer grillin' dish is beer can chicken. But any can of your favorite beverage or marinade works too. Just set the roasting chicken on top of the beer, coke or juice can, place on grilling dish and add all of your favorite veges like zucchini, tomatoes, red skin potatoes and onions and you are good to go. Two hours later,you've got the most juiciest, tender and delicious chicken and carmelized veges ever!
There's a perfect stand to prevent the can from tipping, and this recipe is perfect for entertaining, as you don't have to watch it every 5 minutes or baste or flip.
Just rotate the pan 1/4 turn, every half hour.

My favorite summer dish is Caprese salad... heirloom tomatoes, fresh mozzarella, fresh basil leaves, cracked pepper, drizzles of balsamic vinegar and good olive oil. Super yum.

My favorite summer dinner of all time is from one of my most beloved cookbooks, Charlie Trotter cooks at home. Grilled salmon steaks covered with marinated tomatoes and grilled eggplant. Small Japanese eggplant is best if you can find it at the market. The tomatoes are covered with shallots and tons of fresh basil. It is a cinch to prepare and elegant enough to serve for company. I've made it countless times over the years- gets better and better each time!
